February is the coldest month in Turkey and, in 2027, the month Ramadan begins – expected around Monday 8 February. Istanbul holds at about 10°C, Cappadocia drops to −4°C at night, the ski season is at its best, and prices stay at their January floor. Ramadan in Turkey is a far lighter constraint on visitors than in most Muslim countries, and it adds one of Istanbul’s loveliest sights.
Ramadan in Turkey: what it actually changes
Ramadan is expected to run from about 8 February to 8 March 2027, with Ramazan Bayrami following. Turkey is a secular republic and the practical effect on travellers is much smaller than in the Gulf or North Africa:
- Restaurants, cafes and bars stay open normally in Istanbul, the coastal cities and tourist areas, and alcohol continues to be served. In conservative inland towns, fewer daytime options are open.
- Nobody expects visitors to fast, and eating in public is unremarkable in the cities – though discretion is still courteous in smaller places.
- Mosque visiting hours change around prayer and tarawih, and the mosques are much busier in the evenings.
- Traffic is heavy just before iftar as everyone heads home, and then the streets briefly empty.
And the additions are genuinely worth seeing. Mahya – illuminated messages strung between the minarets of the great mosques – appear across Istanbul for the month; the iftar cannon is fired at sunset; Sultanahmet Square fills with open-air iftar tables; and the Ramadan drummers still walk the neighbourhoods before dawn, which is charming for one night and less so by the fourth if your hotel window faces the street.
Weather by region
- Istanbul – about 10°C by day and 4°C at night, with roughly 82 mm of rain. Damp and windy; February and January are the two coldest months.
- Cappadocia – the coldest of the year: around 6°C by day and −4°C at night, with snow on the valleys.
- The Mediterranean coast – Antalya and the Turquoise Coast are mild at around 16°C, with almond blossom inland and most resorts still closed.
- The Aegean – Izmir and Ephesus mild and wet; the ruins are empty, which is the point.
- Eastern Anatolia – deep winter, and the season for the Kars route and Lake Cildir, where horse-drawn sleighs run on the frozen lake and fishermen cut holes in the ice.

February is the strongest month of the Turkish ski season. Palandoken above Erzurum has the deepest and most reliable snow, Erciyes near Kayseri is modern and sits close enough to Cappadocia to combine the two in one week, and Uludag above Bursa is the busiest because it is nearest Istanbul.
Turkish school holidays fall in the second half of February, which fills Uludag in particular. Book that fortnight ahead or use the eastern resorts, which stay quiet.
Cappadocia in the cold
Snow on the fairy chimneys is the reason to come now, and the cave hotels – carved into rock, usually with underfloor heating and a fireplace – are at their most appealing in February. Balloon flights run but the cancellation rate is at its highest of the year, so allow three mornings rather than one and take the earliest slot in your stay.
The Ihlara Valley, the Goreme open-air museum and the underground cities all work in winter, and several are warmer underground than above.
Prices and crowds
At the annual floor along with January. Istanbul hotels are cheap, Cappadocia cave hotels discount outside weekends, and flights are at their lowest. The exceptions are the ski resorts during the Turkish half-term and Valentine’s weekend in Istanbul and Cappadocia, which is a popular domestic break.

What to pack
